The Role of Vitamin C or Ascorbic Acid
Vitamin C is the most sold vitamin or mineral supplement, and probably the longest history as far as popular public knowledge is concerned. It is the only vitamin I knew of in my childhood, the 1950's, and the first food supplement I ever took) as Haliborange), apart from the then dreaded cod liver oil.
Although always being aware of vitamin C and its necessity, it was not until the 1980's that I really started to look at it seriously. I was chatting to my doctor in the UK, who, like me, had become interested in alternative medicine. I mentioned I tended to get my bouts of iritis, an inflamed iris, after a cold or flu.
His immediate response was something like "become like a goat". What he was referring to was that goats and other mammals create masses of vitamin C themselves to fend of illness. Humans, he said, had lost the ability to manufacture vitamin C, although some argued the species once had the ability to do so.
"Take large doses of vitamin C in the winter, or when you have colds or flu", he suggested. Cut down the colds, and you may fight off iritis too. He proved to be right. Incidents of colds halved at least, and iritis too.
I rarely get colds now, living in a tropical climate for the past 6 years seems to have been a health boost for me. But any sign of a shiver, a cough or a sneeze, then I will take extra, on top of the multivitamin and mineral supplement have taken for 20 years or so.
As with much in food and health science, there is not a lot of agreement by "experts" on how much vitamin C you should take in health or illness. Levels recommended by governments tend to be low and cautious, such as the 90 mgs a day recommended by the US National Academy of Science, with a maximum of 2000mgs. The goat's own vitamin C factory creates 13000 mgs a day normally, up to 100000 mgs daily if stressed, very sick or traumatized.
What does vitamin C actually do? For sure, we know that Vitamin C is required for synthesis of collagen in the connective tissue, dopamine, noradrenaline and adrenaline in the nervous system or in the adrenal glands, and carnitine, important in transferring energy to the mitochondria.
Vitamin C is also an antioxidant, which acts to lessen oxidative stress, and as a substrate for ascorbate peroxidase. Antioxidants generally are subject to much ongoing study at the moment, especially in relation to their possible ability to prevent heart disease and cancer. It is an area of study worth keeping a close eye on as studies emerge.
Best Foods For Vitamin C
There are many foods high in vitamin C, some of the best being wolfberry, rose hip, blackcurrant, red pepper, parsley, kiwi fruit and loganberry. Lower down the list, but also important sources, are the old favorites we probably think of, such as oranges, grapefruit and potato.
